In die tijd aten de meesters op het schip alleen de edele delen van het varken en lieten de rest(en) over voor de slaven. Tijdens het koken van de bonen werden deze resten toegevoegd evenals zout, water, peper en andere kruiden. Dat was het, de feijoada was ontstaan, een gerecht dat in Brazili\u00eb zeer populair is en gewaardeerd wordt.<\/p>\n<p>Het gerecht wordt traditioneel geserveerd met zoete, koele sinaasappelpartjes aan de zijkant en met <a href=\"https:\/\/www.foodandwine.com\/recipes\/toasted-manioc-flour\">geroosterd maniokmeel<\/a> om over de feijoada te strooien.<\/p>\n<p>Dit voegt wat substantie en knapperigheid toe. Het mooiste is dat dit gerecht heel goed samengaat met een goede wijn. Het is een verrassende en heerlijke ervaring die u zeker vaker zult willen ervaren. Helemaal onderaan dit recept vindt u onze wijnsuggesties die dit gerecht nog verrukkelijker zullen maken. Het recept is aangepast aan de ingredi\u00ebnten die in Nederland te vinden zijn. Hieronder leest u hoe u het kunt bereiden:<\/p>\n<p> <\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredi\u00ebnten<\/strong><\/span>           <\/p>\n<p>500gr zwarte bonen (een nacht in water laten weken, giet het water af voordat u de bonen in de pan doet)<\/p>\n<p>200gr mager rundvlees (in middelgrote stukken gesneden)<\/p>\n<p>200 gr gerookte varkensribbetjes (u kunt ook rauwe ribbetjes gebruiken)<\/p>\n<p>200 gr dunne worst (chipotle kan een goede optie zijn)<\/p>\n<p>150 gr spek in grote blokken gesneden<\/p>\n<p>200 gr gerookte worst in dikke plakken gesneden<\/p>\n<p>3 laurierblaadjes<\/p>\n<p>2 sinaasappels met schil (goed gewassen), elk in vier partjes gesneden<\/p>\n<p>200gr fijngehakte ui<\/p>\n<p>100gr fijngehakte knoflook<\/p>\n<p>Zout\/peper indien nodig<\/p>\n<p> <\/p>\n<p><strong><span style=\"text-decoration: underline;\">Bereiding<\/span><\/strong><\/p>\n<p>Doe het spek in de snelkookpan*. Wanneer er wat olie is vrijgekomen en het spek bruin is, voeg dan de fijngehakte ui toe en fruit deze 2 minuten mee. Voeg vervolgens de fijngehakte knoflook toe en fruit deze 1 minuut mee.<\/p>\n<p>Voeg vervolgens het magere rundvlees toe en bak dit totdat het bruin is. Voeg dan de spareribs toe en bak ongeveer 3 minuten. Als ze bruin zijn, voeg dan de uitgelekte bonen, de laurierblaadjes, de worst en de sinaasappel toe. Sauteer (op hoge temperatuur de ingredi\u00ebnten bakken onder regelmatig roeren) gedurende ongeveer 2 minuten.<\/p>\n<p>Bedek de stoof met kokend water (ongeveer 3 vingers boven de stoof) en sluit de pan. Als u dit in de snelkookpan maakt, telt u af vanaf 30 minuten wanneer de druk is opgebouwd.<\/p>\n<p>Zet de snelkookpan uit, wacht tot de pan drukloos is en open de pan. Verwijder de sinaasappel en gooi hem weg. Zet de pan weer op het vuur met de pan open.<\/p>\n<p>Neem een stevige juslepel van de zachte bonen uit de feijoada samen met de bouillon, en prak dit met een vork tot een brij. Doe de bonenpap terug in de pan en laat dit op laag vuur ongeveer 10 tot 15 minuten koken.<\/p>\n<p>Proef de feijoada en controleer of er zout en peper moet worden toegevoegd.<\/p>\n<p>Serveer met witte rijst en boerenkool gesauteerd in olijfolie en knoflook, sinaasappelpartjes en een fijne \u201cfarofa\u201d van maniokmeel.<\/p>\n<p> <\/p>\n<p>*Als je geen snelkookpan hebt, kun je het ook in een grote pan maken. De kooktijd zal dan oplopen tot ongeveer 2 uur of tot het vlees goed gaar en zacht is.<\/p>\n<p> <\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Harmoniseert goed met:<\/strong><\/span>
